Chia Seed Pudding

As most people know, chia seeds are highly nutritious and known as a "superfood". What is also great about them is the fact that they are so easy to add into our diets. This chia seed pudding is not only healthy, but simple to make and delicious. It is also very easy to change up the flavours!
Vanilla Chia Pudding
Ingredients
- 1 cup plant milk (I like oat milk, almond milk, coconut milk, or soy milk)
- 1 tsp pure vanilla extract
- drizzle of maple syrup or 1/2 - 1 tsp coconut sugar
- 3 tbsp chia seeds
Method
- Whisk all the ingredients together in a bowl, drizzling in the maple syrup or sugar to taste.
- Cover the bowl tightly with plastic wrap and refrigerate over night (or approx. 4 hours).
- When ready to serve, stir the chia mixture again to eliminate any clumps.
- Serve spoonfuls of chia pudding into bowls or glasses. Garnish with cashew cream or plant based yoghurt, and fruit, or whatever you fancy.
Notes
- This makes a great breakfast with granola and dairy free yoghurt; or a wonderful dessert with cashew cream, shavings of dark chocolate, coconut and almonds.
- If the pudding is too thick, stir in some extra milk just before serving.
- For non vegans: Replace the plant milk with regular milk if preferred, and regular yoghurt or creme fraiche to serve.
Strawberry Chia Pudding
Ingredients
- 1 cup plant milk
- 6 large strawberries
- 1 tsp pure vanilla extract
- drizzle of maple syrup or 1/2 - 1 tsp coconut sugar
- 3 tbsp chia seeds
Method
- Place all the ingredients, except the chia seeds, into a blender. Blend thoroughly.
- Transfer to a bowl and whisk in the chia seeds.
- Cover the bowl tightly and refrigerate over night (or approx. 4 hours).
- When ready to serve, stir the chia mixture again to eliminate any clumps.
- Serve spoonfuls of chia pudding into bowls or glasses. Garnish with muesli and fresh blueberries, or whatever you fancy. - I added a lovely fresh peach to this, after taking the photo!
